EASY CHOCOLATE PEANUT BUTTER OATS

Breakfast for dinner anyone? I love eating loaded oats for any meal of the day when I'm pressed for time. It's a wholesome meal that will keep you satisfied for hours. This method leaves the oats with a firmer and chewy texture so it's perfect for those that don't like mushy oatmeal (my husband :). Swich up the toppings to keep it interesting! Vegetarian, GF.

Ingredients:


OATS

  • 1/2 cup boiling water

  • 1/2 cup old fashioned oats

  • 1 tablespoon peanut butter (or almond butter)

  • 1/2-1 tablespoon cacao powder (or unsweetened cocoa)

  • ½ tablespoon flaxseed meal

  • ½-1 tablespoon raw honey (or pure maple syrup)


FOR SERVING, OPTIONAL

  • Fresh strawberries, sliced

  • Banana slices

  • Coconut flakes

  • Chia seeds

  • Unsweetened vanilla almond milk


Method:

  1. Add the boiling water, oats, peanut butter and cacao to a breakfast bowl and stir until well combined. Microwave for 1-2 minutes.

  2. Cover with a plate while you prepare your toppings.

  3. Remove plate and stir in flaxseed meal, honey/maple syrup and optional almond milk.

  4. Add your favorite toppings like strawberries, bananas, coconut and chia seeds. Enjoy!
