Fresh tomatoes, onions, herbs and jalapeno are combined to create this quick & versatile recipe. Use it as a flavor topper on your favorite Mexican dish, fish or eggs - and of course enjoy with tortilla chips!
Yields about 1 cup
1 cup fresh tomatoes, diced (any color or variety)
½ cup diced onion (white or red)
½ fresh jalapeno, minced (remove seeds and pith to reduce heat)
¼ cup fresh cilantro, firmly packed & chopped (leaves & stems)
2 Tbsp fresh lime juice, about 1 lime
¼ tsp sea salt
Combine all ingredients in an airtight container. Store in the refrigerator for up to a week.
