This vegan cashew ranch is a clean, nutrient-dense alternative to traditional bottled ranch made without refined oils, added sugars, or artificial additives like MSG. Cashews provide healthy fats, plant-based nutrients, and a small boost of fiber, while fresh herbs and garlic add flavor and antioxidants.

Ingredients:
1/2 cup raw cashews* (see note)
1/2 cup water
1 tablespoon fresh lemon juice
2-inch piece green onion, white part (or fresh chives)
1 teaspoon dried parsley
1 medium garlic clove
1/2 teaspoon sea salt
1/4 teaspoon dijon mustard
1/8 teaspoon dried dill
Method:
Add all ingredients to a high-speed blender.
Blend until smooth and creamy, about 1 to 2 minutes.
Transfer to an airtight container and refrigerate for 30 minutes to thicken and develop flavor. Stir well before serving.
Store in the refrigerator for up to 7 days. Add a splash of water if it thickens over time.
Flavor Variations:
Cilantro Ranch - Blend with ½ cup fresh cilantro (leaves + tender stems) for a bright, zesty twist. Pairs well with Latin-inspired dishes.
Green Goddess Ranch - Blend with ½ cup fresh basil + ½ cup fresh parsley for a fresh, herb-forward dressing. Pairs well with chilled pasta or leafy green salads.
Dill Dip (Thicker Version) - Use only 6 tablespoons of water. After blending, stir in 2 tablespoons fresh chopped dill (or 2 teaspoons dried dill).
