Vegan Cashew Ranch Dressing (with variations)

A smooth, creamy vegan ranch dressing made with simple, whole ingredients – no dairy, no preservatives. This versatile base can be transformed into a fresh, herb-packed Green Goddess or a thicker Dill Dip for dipping and spreading.


This vegan cashew ranch is a clean, nutrient-dense alternative to traditional bottled ranch made without refined oils, added sugars, or artificial additives like MSG. Cashews provide healthy fats, plant-based nutrients, and a small boost of fiber, while fresh herbs and garlic add flavor and antioxidants.


Perfect for drizzling over salads, bowls, and handhelds, or serving as a creamy dip, this dressing comes together in minutes with mostly pantry staples making it an easy upgrade for weekly meal prep.

Ingredients:

  • 1/2 cup raw cashews* (see note)

  • 1/2 cup water

  • 1 tablespoon fresh lemon juice

  • 2-inch piece green onion, white part (or fresh chives)

  • 1 teaspoon dried parsley

  • 1 medium garlic clove

  • 1/2 teaspoon sea salt

  • 1/4 teaspoon dijon mustard

  • 1/8 teaspoon dried dill


Method:

  1. Add all ingredients to a high-speed blender.

  2. Blend until smooth and creamy, about 1 to 2 minutes.

  3. Transfer to an airtight container and refrigerate for 30 minutes to thicken and develop flavor. Stir well before serving.

  4. Store in the refrigerator for up to 7 days. Add a splash of water if it thickens over time.


Flavor Variations:

  • Cilantro Ranch - Blend with ½ cup fresh cilantro (leaves + tender stems) for a bright, zesty twist. Pairs well with Latin-inspired dishes.

  • Green Goddess Ranch - Blend with ½ cup fresh basil + ½ cup fresh parsley for a fresh, herb-forward dressing. Pairs well with chilled pasta or leafy green salads.

  • Dill Dip (Thicker Version) - Use only 6 tablespoons of water. After blending, stir in 2 tablespoons fresh chopped dill (or 2 teaspoons dried dill).


Pro-Tip: No high-speed blender? Soak cashews in hot water for 30 minutes, then drain and blend.
