Fresh pineapple salsa is a perfect companion to your favorite Mexican-inspired dish or with chips and salsa. So bright and tangy!

Yields about 3 ½ cups


  • 3 cups fresh pineapple, diced (about 1 medium cored pineapple)

  • 1 red bell pepper, diced

  • ¼ cup chopped red onion (about ½ small onion)

  • ¼ cup fresh cilantro, chopped and firmly packed

  • 3 Tbsp fresh lime juice

  • ½ teaspoon fine sea salt


  1. Combine all ingredients in an airtight container and store in refrigerator for 4-5 days.
