This super salad is rich in vitamins, minerals and antioxidants! Spicy microgreens, peppery arugula and radish topped with feta, fresh basil & dill, toasted pepitas then drizzled with a red wine vinaigrette. Add some dried cranberries for a touch of sweetness!
4-6 servings
INGREDIENTS:
Red Wine Vinaigrette recipe
2 cups baby spinach
1 cup arugula
1/2 cup microgreens
1/2 cucumber, large dice
1/4 cup toasted raw pepitas
2 or 3 radishes, thinly sliced
1/4 cup feta cheese (optional)
1 Tbsp fresh dill, chopped
2 Tbsp fresh basil, chiffonade or chopped
1/4 cup dried cranberries (optional but delicious)
DIRECTIONS:
Make the vinaigrette.
Add salad ingredients into a large bowl.
Lightly drizzle a few tablespoons of vinaigrette and toss gently to combine all ingredients.
