SPICY GREEN SALAD w/ TOASTED PEPITAS & FETA


This super salad is rich in vitamins, minerals and antioxidants! Spicy microgreens, peppery arugula and radish topped with feta, fresh basil & dill, toasted pepitas then drizzled with a red wine vinaigrette. Add some dried cranberries for a touch of sweetness!

4-6 servings


INGREDIENTS:


  • Red Wine Vinaigrette recipe

  • 2 cups baby spinach

  • 1 cup arugula

  • 1/2 cup microgreens

  • 1/2 cucumber, large dice

  • 1/4 cup toasted raw pepitas

  • 2 or 3 radishes, thinly sliced

  • 1/4 cup feta cheese (optional)

  • 1 Tbsp fresh dill, chopped

  • 2 Tbsp fresh basil, chiffonade or chopped

  • 1/4 cup dried cranberries (optional but delicious)


DIRECTIONS:


  1. Make the vinaigrette.

  2. Add salad ingredients into a large bowl.

  3. Lightly drizzle a few tablespoons of vinaigrette and toss gently to combine all ingredients.
