TOASTED PEPITAS & RADISH SUPER SALAD

This super salad is rich in vitamins, minerals and antioxidants! Spicy microgreens, peppery arugula & radish topped with fresh basil & dill, toasted pepitas then drizzled with a red wine vinaigrette.

4-6 servings


INGREDIENTS:


  • Red Wine Vinaigrette recipe

  • 2 cups baby spinach

  • 1 cup arugula

  • 1/2 cup microgreens

  • 1/2 cucumber, large dice

  • 1/4 cup toasted raw pepitas

  • 2 or 3 radishes, thinly sliced

  • 2 Tbsp plant-based crumbled cheese (optional)

  • 1 Tbsp fresh dill, chopped

  • 2 Tbsp fresh basil, chiffonade or chopped


DIRECTIONS:


  1. Make the vinaigrette.

  2. Add salad ingredients into a large bowl.

  3. Lightly drizzle a few tablespoons of vinaigrette and toss gently to combine all ingredients.
