Makes about 4 cups
Ingredients:
4 cups RAW nuts or seeds (I used pecans, walnuts and almonds)*
1 tablespoon extra virgin olive oil (or omit if avoiding oil)
1 tablespoon pure maple syrup
1 tablespoon + 1 teaspoon chili powder
1 teaspoon garlic powder
½ teaspoon ground cumin
½ teaspoon sea salt, or to taste
¼ teaspoon ground black pepper
¼ teaspoon cayenne
Method:
Preheat oven to 350 degrees F. Line one baking sheet with parchment paper.
In a large bowl, combine the nuts, oil (if using) and maple syrup. Stir until evenly coated.
In a small bowl, mix together all the spices. Sprinkle over the nut mixture and stir until evenly coated.
Bake for 15 minutes on the middle rack only. Flip and rotate the nuts after the first 8 minutes.
Allow to cool completely so the nuts become crunchy. Store in airtight container for up to 2 weeks.
