MEDITERRANEAN BOWL w/ ROASTED VEGGIES

This Mediterranean Bowl is made with roasted veggies, quinoa, greens & hummus - it's light, nutritious and packed with amazing flavors!

INGREDIENTS:


  • 2 cups baby spinach

  • 1 cup arugula (or any spicy greens)

  • 1/2 cup microgreens

  • 1 cup cooked quinoa

  • 2 Roasted Veggie Kabobs (or 1 cup roasted veggies)

  • 1/2 cup pickled turnips (or roasted beets)

  • 1/2 cup kalamata olives, pitted & sliced

  • 1/2 cup hummus (optional)

  • 4 Tbsp Red Wine Vinaigrette

DIRECTIONS:


  1. Dividing all ingredients into four bowls, add in the order they appear above.

  2. Lightly drizzle 1 Tbsp of vinaigrette over each bowl. Enjoy!


NOTE: Add Kalamata olives for extra flavor and healthy fat and pair it with to pita for a mediterranean wrap!
