CHOCOLATE COCONUT ENERGY BITES

A client and family favorite recipe that can be enjoyed as a healthy snack or dessert. These energy bites are made with whole-food ingredients and are full of fiber, protein, omega-3 fatty acids, vitamins and minerals. They disappear quickly in our home so I always make a double or triple batch and freeze half :)


Yields about 18 pieces


Ingredients:

  • 2/3 cup unsweetened shredded coconut

  • 1/3 cup flaxseed meal

  • 1/2 cup roasted sunflower seeds (or chopped pecans or walnuts)

  • 2 tbsp maple syrup (or raw honey)

  • 2 tsp chia seeds

  • 1 tsp vanilla extract

  • 2/3 cup runny peanut butter (or sunflower seed butter or any nut butter)

  • 1/2 cup chocolate chips (or chopped dried cherries)


Method:

  1. In a medium mixing bowl combine the coconut, flaxseed, sunflower seeds, maple syrup, chia and vanilla and mix well.

  2. Stir in the nut or seed butter until combined.

  3. Fold in the chocolate chips. The mixture will be extremely thick so you can use your hands as needed to mix well.

  4. Roll into 1-inch balls.

  5. Store in an airtight container in the refrigerator for 2 weeks or freeze for up to one month.
