CHOCOLATE COCONUT ENERGY BITES

This recipe is beloved by clients and their families, perfect for a nutritious snack or dessert. Packed with whole-food ingredients, these energy bites are rich in fiber, protein, omega-3 fatty acids, vitamins, and minerals. They are so popular in our household that I often prepare double or triple batches and freeze some for later enjoyment :)


Yields about 12 pieces


Ingredients:

  • 2/3 cup unsweetened shredded coconut

  • 1/3 cup flaxseed meal

  • 1/2 cup roasted sunflower seeds (or chopped pecans or walnuts)

  • 2 tablespoons pure maple syrup (or raw honey)

  • 2 teaspoons chia seeds

  • 1 teaspoon vanilla extract

  • 2/3 cup runny peanut butter (or sunflower seed butter or any nut butter)

  • 1/2 cup chocolate chips (or chopped dried cherries)


Method:

  1. In a medium mixing bowl combine the coconut, flaxseed, sunflower seeds, maple syrup, chia and vanilla and mix well.

  2. Stir in the nut or seed butter until combined.

  3. Fold in the chocolate chips. The mixture will be extremely thick so you can use your hands as needed to mix well.

  4. Roll into 1-inch balls.

  5. Store in an airtight container in the refrigerator for 2 weeks or freeze for up to one month.
