This base recipe was created by my Grandma and continues to be my ultimate breakfast comfort food, especially during the cooler months. Oats, tender apples and plump raisins are combined with cinnamon, flaxseed meal and raw honey plus your favorite toppings.
2-4 servings
Ingredients:
1 cup old fashioned rolled oats
2 cups water
1 medium apple, diced (peeled if non-organic)
1/4 cup raisins
¼ tsp pink salt (optional)
1 Tbsp flaxseed meal
1 tsp cinnamon
1 tsp raw honey, more to taste (or pure maple syrup)
TOPPING OPTIONS
fresh berries or peaches, nut butter, raw nuts or seeds, hemp hearts, banana slices, shredded coconut, dark chocolate chips, unsweetened cranberries or cherries
Method:
Add oats, water, apple, raisins and salt to a small pot and bring to a boil. Reduce heat and simmer for about 5-7 minutes stirring occasionally.
Stir in cinnamon, flaxseed meal and honey until combined.
Place in bowl and add your favorite toppings. Enjoy!
NOTE: Make a double batch on meal prep day and enjoy it several times throughout the week. Add a little plant- based milk when reheating. Also makes a healthy dessert.
