APPLE SPICE OATMEAL (no sugar added)

A bowl of cozy to be enjoyed for breakfast or lunch, especially during the fall and winter months :) This whole food, plant-based recipe requires zero added sugar and uses Mother Nature's candy like fresh apples, dried raisins and spices. Make a big batch on your weekly meal prep day to enjoy all week. V, GF.

Ingredients:

  • 1 cup rolled oats

  • 1 cup unsweetened oat milk

  • 1 cup filtered water

  • 1 medium apple, cored and diced (leave skin on if organic)

  • ¼ cup raisins

  • 1 tsp cinnamon

  • 1 pinch ground cloves*

  • 1 pinch ground nutmeg*

  • 1 pinch ground cardamom*

  • 2 Tbsp flaxseed meal

FOR SERVING, OPTIONAL

  • Unsweetened non-dairy milk

  • Handful of raw nuts or seeds


Method:

  1. To a small saucepan, add oats, oat milk, water, apple, raisins and spices (do not add flaxseeds yet). Stir until combined. Bring to a boil then reduce heat and simmer for 5-6 minutes or until oats are chewy.

  2. Stir in flaxseed meal.

  3. Serve with additional milk and nuts/seeds if desired. Enjoy warm or cold.

  4. Store leftovers in an airtight container for up to 5 days.

NOTE: A pinch is equal to 1/16 teaspoon measurement.
