PESTO VINAIGRETTE

Fresh basil is combined with lemon, nuts, nutritional yeast, garlic and olive oil to create a delicious, versatile sauce! Toss together with salads, grain bowls and chilled or warm pasta. Try adding a drizzle over hummus, grilled veggies, seafood or meat to add extra flavor and nutrients. Gluten-free, vegan.


Yields about ¾ cup


Ingredients:

  • 2 cups fresh basil leaves and some stems (or 1 cup parsley & 1 cup basil)

  • 1/2 cup extra virgin olive oil

  • 2 Tbsp nutritional yeast

  • 2 Tbsp raw cashews (or pine nuts)

  • 2 medium garlic cloves

  • 1 Tbsp fresh lemon juice

  • ½ teaspoon sea salt

  • 4 twists freshly ground black pepper


Method:

  1. Add all ingredients to a high speed blender and blend until smooth and creamy.

  2. Store in an airtight jar and refrigerate for up to 4 days.


Note: Be sure to shake well just before serving as the ingredients will separate.
