BALSAMIC WALNUT DRESSING (oil-free)

Making your own dressing is so quick and simple once you stock some basic ingredients in your pantry. It's a much healthier option than shelf-stable versions because you control the oil, salt and sugar - and avoid artificial colors and preservatives. Use this whole food, plant-based (WFPB) dressing on salads, roasted or steamed veggies, grains and legumes for an added tangy sweetness.

Makes about 4 servings


Ingredients:

  • ¼ cup aged balsamic vinegar 

  • ⅓ cup raw walnut pieces 

  • ¼ cup water

  • 1 Tablespoon fresh lime juice

  • ½ Tablespoon Dijon mustard

  • ½ Tablespoon pure maple syrup  

  • 1 clove garlic

  • ½ teaspoon dried thyme 

  • ¼ teaspoon salt

  • ⅛ teaspoon freshly ground black pepper


Method:

  1. Add all ingredients to a high speed blender and blend until smooth and creamy. Serve cold or at room temperature.

  2. Refrigerate leftovers in an airtight container for up to a week.


Note: The consistency may thicken after refrigerating. Add a teaspoon of water at a time and whisk until you reach a pourable consistency.
