GINGER MINT SWITCHEL

Make this gut-healthy drink part of your daily routine! Consume cold with ice on a hot day - or after exercising in place of sugary electrolyte drinks or soda - or use as a mixer with your favorite spirit and/or seltzer water.

INGREDIENTS:


  • 3 1/2 cups filtered water

  • 10 fresh mint leaves (reserve 4 for garnish)

  • 1/4 tsp powdered stevia (or 3 Tbsp pure maple syrup)

  • 1" ginger root, grated

  • 1/2 cup apple cider vinegar (w/ the mother)

  • 2 Tbsp fresh lemon juice


DIRECTIONS:


  1. Boil 3 1/2 cups filtered water and add to mint leaves. Steep for 5-10 mins depending on taste preference (I did 10 mins). Remove leaves.

  2. Add ginger & stevia (or maple syrup) to a quart size jar. Add mint-infused water and allow to cool.

  3. Once cooled, add vinegar and lemon juice.

  4. Store in the refrigerator with an air-tight lid for 4 hours or more. Strain out the ginger pieces before enjoying. Keep refrigerated for up to a month.
