This 5-minute recipe is made with aquafaba (chickpea brine) instead of oil - using all whole food ingredients. Make a batch during your meal prep and enjoy all week long! It's great on salads, Mediterranean nourish bowls and roasted or steamed veggies.
Yields about 5 ounces
½ cup aquafaba (the liquid in a can of chickpeas)
2 Tbsp aged balsamic vinegar (or red wine vinegar)
1-2 garlic cloves
1/2 Tbsp pure maple syrup
1 tsp dijon mustard
1 tsp dried oregano
1 tsp sea salt (or to taste)
freshly ground pepper
Add all the ingredients to a high-powered blender (or use an immersion blender) and combine until smooth, about 1 to 2 minutes
Store in an airtight container for up to 5 days.
NOTE: We LOVE garlic so I always use two medium cloves in this recipe.
