GREEK DRESSING: oil-free

This 5-minute recipe is made with aquafaba (chickpea brine) instead of oil - using all whole food ingredients. Make a batch during your meal prep and enjoy all week long! It's great on salads, Mediterranean nourish bowls and roasted or steamed veggies.


4-6 servings


Ingredients:


  • ¼ cup aquafaba (chickpea brine)

  • 2 Tbsp red wine vinegar

  • 1/2 Tbsp pure maple syrup

  • 1 garlic clove, minced

  • 1/2 tsp dijon mustard

  • 1/2 tsp dried oregano

  • 1/2 tsp sea salt (or to taste)

  • freshly ground pepper


Directions:


  1. Add all ingredients together and combine in a high-speed blender. Store in an airtight container in the fridge for up to 5 days.
