This 5-minute recipe is made with cashews instead of oil. Make a batch during your meal prep and enjoy all week long! It's great on salads, Mediterranean nourish bowls and roasted or steamed veggies.

  • ⅓ cup raw cashews

  • ⅓ cup water

  • 1 ½ Tbsp red wine vinegar

  • 1 medium garlic clove

  • 1 tsp raw honey (or pure maple syrup)

  • 1 tsp dijon mustard

  • ½ tsp dried oregano

  • ½ tsp sea salt, more to taste

  • Freshly ground black pepper


  1. Add all ingredients to a high speed blender and blend until smooth and creamy.

  2. Store in an airtight container and refrigerate for up to 7 days.

Note: If you don’t have a high speed blender and you are using cashews, soak in hot water for 30 minutes prior to blending. Discard soaking water.
